Hamburgers
500gr mince beef (5% fat) 1 teaspoon of pureed onion dash of Worcestershire sauce salt pepper
Mix ingredients in a bowl and form a large ball. Cut in half to form two balls, but in halves to form four balls. Flatten into hamburger shapes.
Cook on a hot griddle pan for three minutes each side.

Chips
Use maris piper, King Edwards or White Estima.
The potatoes should be as fresh as possible. Peel the potatoes and cut into chips. Allow the chips to soak in water to remove starch. Make sure they are well drained.
Cook first at 160 degrees centigrade for about 4 minutes until slightly soggy looking and yellow coloured.
Allow to rest for at least half an hour on kitchen paper.
Cook again at 190 degrees centigrade for approx. 3 minutes until crisp and golden.
Corn oil or beef dripping is best for frying.
The chip butty
Two slices of white bread well buttered. Fresh hot chips Salt, and malt vinegar.
